Fluffy Vanilla Pancakes

Have you ever woke up from an amazing sleep and just craved a difference in your daily routine? These delicious Vanilla Pancakes could be that mouth watering delight. With this simple recipe you can start your day with some sweetness and feel happier for it. We all need a bit of cheeky in our day to day lives, so why not these?
Recipe
2 Medium Sized Eggs.
300g (or 2 and a half cups) of self raising flour.
1 Tea Spoon of Vanilla Extract.
1 Table Spoon of Baking Soda.
4 Table Spoons of Caster Sugar.
Milk (used to texture the batter).
Start by adding your dry ingredients to a large mixing bowl.
crack your eggs into a bowl and give them a quick whisking then add your vanilla extract.
Add your egg mixture to the mixing bowl and use a fork to mix it up vigorously.
Your mixture should start to come to a dough-like texture. This is where you add 2 tablespoons of milk into the mixture at a time until the pancake batter just about runs off the spoon.
pre-heat your frying pan on a low heat with some vegetable/sunflower oil (or butter for more flavour).
Once your pan is hot enough, add a spoonful of the batter to the center of the pan and add another spoonful on top of that instantly.
fry until small holes start to appear on the top side. Flip your Pancake over and continue to fry until both sides are a nice golden brown.
serve hot with 25g of butter and maple syrup.
Tip
If your Pancakes are still gooey in the center then you need to reduce the heat and cook for a few mins longer.
